Two Healthy Weekend Dinners

It's a new year and what a better time to start thinking about eating better.  Try these delicious dinner plans - Marinaded Grilled Calamari, Roasted Brussel Sprouts, and Boiled Red Potatoes This is an easy and quite tasty meal filled with plenty of healthy items. Marinade Grilled Calamari: 2 lbs of uncooked calamari (octopus) with tubes and tentacles separated 1-2 tablespoon of fresh minced garllic 1/4 cup olive oil 1 teaspoon of red chili flakes 1 tablespoon of parsely chopped or dried pinch of sea salt Combine all ingredients in a large bowl.  Marinate calamari for 1-4 hours, mixing occasionally.  When ready to grill, make sure grill is at high heat (400 degrees).  Place tubes on grill fo
