Memorial Day is the unofficial start to summer. So don't let your healthy diet plan suffer. Try these 3 tasty, yet healthy dishes. 1. Goat Cheese Beet Salad: 2 can of sliced beets 1 1/2 Tablespoons of fresh goat cheese 1/2 cup of chopped pecans 1/2 cup of dried currents Cut up beets into small bite size pieces. Crumble the goat cheese. In a large bowl, mix together all ingredients. Chill and serve cold. 2.
