The unofficial end to summer is a great time to celebrate with friends and family. Heading to the beach or hosting a BBQ for the weekend? Then try these tasty, healthy and easy salads.
1. Strawberry, Blueberry and Mint Salad
one carton of fresh strawberries sliced in half
one carton of fresh blueberries
4 sprigs of fresh mint leaves chopped thinly
Place all ingredients in a large bowl, mix and chill for 3 hours. Serve chilled!
2. Kale Watermelon Salad
one bunch of fresh kale, stems trimmed and leaves separated
2 cups of cubes fresh watermelon
1/2 cup whole almonds
1/2 cup crumbled goat cheese
Olive oil to taste for dressing
Combine all ingredients except olive oil into large bowl. Mix and drizzle oil evenly over top of salad, Serve chilled!
