Two Healthy Weekend Dinners

It's a new year and what a better time to start thinking about eating better.  Try these delicious dinner plans - 

Marinaded Grilled Calamari, Roasted Brussel Sprouts, and Boiled Red Potatoes

 This is an easy and quite tasty meal filled with plenty of healthy items.  

Marinade Grilled Calamari:

2 lbs of uncooked calamari (octopus) with tubes and tentacles separated

1-2 tablespoon of fresh minced garllic

1/4 cup olive oil

1 teaspoon of red chili flakes

1 tablespoon of parsely chopped or dried 

pinch of sea salt

Combine all ingredients in a large bowl.  Marinate calamari for 1-4 hours, mixing occasionally.  When ready to grill, make sure grill is at high heat (400 degrees).  Place tubes on grill for 3-4 minutes, flipping only once.  Remove when firm.  Then place tentacles on the grill for 1 minute.  Then spread out the arms to cook equally.  Serve warm!

Roasted Brussel Sprouts:

1 package of brussel sprouts with ends cut off and sliced in half

1 container of baby bella mushrooms, sliced

2 tablespoons of avocado oil

pinch of sea salt and 1/4-1/3 teaspoon of pepper

Truffle oil to taste (optional)

Place all ingredients in large cooking pan.  Place in the oven at 350 degrees for 30-45 minutes until brussel sprouts are tender.  Serve warm!

Boiled Red Potatoes:

1/2 lbs of red bliss potatoes

water

Place potatoes in boiling water.  Cook on high heel for 10-15 minutes until potatoes are tender.  Serve warm!

Turkey Meatloaf, Roasted Rosemary Potatoes, and Grilled Red Leaf Lettuce with Balsalmic

Try this other tasty dinner plan and you will be sure to love it!

Turkey Meatloaf

1 lbs of ground fresh turkey 

1 can of fresh tomato sauce (just tomatoes)

1 tablespoon of minced garlic

1 egg beaten

1 slice of gluten free bread, crumbled into small pieces

1/2 teaspoon of black pepper

Mix all ingredients together in a large bowl.  Pat down mixture into baking pan.  Bake at 350 degrees for 45 minutes, until inserted knife is clean and meat is brown. 

Roasted Rosemary Potatoes 

1/2 lbs of red bliss potatoes

4 sprigs of fresh rosemary, leaves taken off stem

1 tablespoon of minced garlic

1/4 cup olive oil

Place potatoes in boiling pot of water.  Cook until tender, about 10 minutes.  Remove potatoes and place in large bowl.   Mix in garlic and rosemary and dress with olive oil.  Place mixture in large baking pan, and bake at 350 degrees for 10 minutes or until lightly crisp. Serve warm!

Grilled Red Leaf Lettuce with Balsamic 

1 bunch of red leaf lettuce

2 tablespoons of balsamic 

Separate and clean lettuce.  Cut off ends.  spread out and place on a grill pain on medium heat.  Lightly turn the lettuce until slightly wilted.  Lower the heat and drizzle balsamic over the lettuce.  Cook until balsamic is slightly thickened.  Serve warm.
