Two Tasty Labor Day Salads

The unofficial end to summer is a great time to celebrate with friends and family.  Heading to the beach or hosting a BBQ for the weekend?  Then try these tasty, healthy and easy salads.

1.  Strawberry, Blueberry and Mint Salad

  • one carton of fresh strawberries sliced in half

  • one carton of fresh blueberries

  • 4 sprigs of fresh mint leaves chopped thinly

Place all ingredients in a large bowl, mix and chill for 3 hours.  Serve chilled!

2.  Kale Watermelon Salad

  • one bunch of fresh kale, stems trimmed and leaves separated

  • 2 cups of cubes fresh watermelon

  • 1/2 cup whole almonds

  • 1/2 cup crumbled goat cheese

  • Olive oil to taste for dressing

Combine all ingredients except olive oil into large bowl.  Mix and drizzle oil evenly over top of salad,  Serve chilled!
