3 Healthy Grilling Ideas
The weather is getting warmer which means we head outdoors for grilling! Grilling food is a great way to share a meal with family and friends. But how do you keep it healthy at the same time? Try these three delicious and healthy recipes.
Rosemary Grilled Chicken: First marinate two chicken breasts with olive oil, tablespoon of minced garlic, 4 sprigs of fresh rosemary (detach the leaves) and salt and pepper to taste. Marinate at least two hours. Then pre-heat the grill to medium heat. Place chicken on grill and cook about 8 minutes on each side (depending on thickness). Check to make sure it’s thoroughly cooked through.
Sliced Grilled Zucchini: Slice zucchini long ways into thin strips. Place in a bowl and marinate with olive oil. Then place the zucchini on the grill at low to medium heat perpendicular to grill lines. Cook on both sides about 2-3 minutes. Place on plate and drizzle with olive oil. Can be served warm or chilled.
Western Grilled Potatoes: Cut red bliss potatoes into quarters. Place in a bowl and evenly season with garlic powder, paprika, cumin, and chili powder. Drizzle with olive oil and mix well. Place mixture in a grill basket and place on top shelf of the grill on medium heat. Cook potatoes about 20-30 minutes making sure to stir the potatoes occasionally.
