Summer is here and finding the motivation to cook can be hard. So don't let your healthy diet plan suffer. Try these 3 tasty, yet healthy dishes.

Goat Cheese Beet Salad:

2 cans of sliced beets

1 1/2 tablespoons of fresh goat cheese

1/2 cup of chopped pecans

1/2 cup of dried currents

Cut up beets into small bite size pieces. Crumble the goat cheese. In a large bowl, mix together all ingredients. Chill and serve cold.

Grilled Kale with Balsamic Reduction:

1 head of fresh kale

balsamic vinegar

Clean kale and cut off the end. Place kale leaves over the grill on medium heat for 2-5 minutes until wilted. Then place kale in a large saucepan. Dress with balsamic and cook on medium heat until it thickens. Serve warm.

Rosemary Garlic Grilled Chicken:

4 fresh boneless chicken breast

Olive oil

4 sprigs of fresh rosemary (de-stemmed)

1 tablespoon of fresh minced garlic

In a large bowl, combine all ingredients and immerse chicken (making sure there is enough liquid to cover). Let marinade for 4-8 hours. Remove from marinade and place on the grill on high heat for 5 minutes on each side or until fully cooked. Serve warm.
